Baby Banana Pancakes

Excuse my super old and beat up pan, but I just had to show you how absolutely easy these pancakes are. The recipe is simple: 1 egg per 1/4 cup of banana. Make sure to use a ripe banana because it’ll be extra sweet and easy to mash. The recipe is below the video and calls for one whole banana, which is usually half a cup. Enjoy!

DIRECTIONS:

  1. Heat a nonstick pan to medium heat. Spray with nonstick spray or use a little butter to coat the pan. Make sure not to burn it.
  2. In a small bowl, mash 1 ripe banana (1/2 a cup).
  3. Add 2 medium sized eggs in the bowl. Sprinkle a little cinnamon if you’re fancy. Whisk well.
  4. I use a literal tablespoon to scoop the batter into the heated pan. Usually 3-4 at a time.
  5. Wait until the edges of the pancakes appear doughy (about 2 minutes) and flip for 1 minute more.
  6. Remove, allow to cool to safe baby temperature, and serve.

BLW NOTE: Pancakes will have a firm custard-like texture inside if you’re considering the coin test, but ultimately use your discretion.
